We don’t know that much about Ahsoka's initial search for Thrawn. That moment in The Mandalorian is revealing; she asks Morgan, “Where is your master? Where is Grand Admiral Thrawn?”   This suggests prior investigation; showing some leads;  showing a history of intelligence gathering had already been performed before showing up; making that dramatic encounter extremely meaningful.
