Rey's Yellow Lightsaber Is Basically "The Rule of Cool."
Rey's yellow lightsaber may not have any actual purpose, indeed probably not. She is shown brandishing a range of lightsabers throughout the sequel trilogy, including Kylo Ren's and Anakin Skywalker's original lightsaber. Giving Rey a yellow lightsaber could have been done so simply to differentiate her from those who come before, therefore visually making her a more distinctive character.
This, together with the fact that yellow complements her general look, makes the solution far simpler than many would have guessed it to be. Simply said, yellow lightsabers are cool, so Star Wars heroes can have yellow lightsabers. Not every lightsaber has to have a convoluted background linked with it.
